Anita Canary's Carrot Cake
- 2 c. flour
- 2 c. sugar
- 1 1/2 c. Wesson Oil
- 2 tsp. cinnamon
- 2 tsp. soda
- 2 tsp. salt
- 3 eggs
- 2 c. shredded carrots
- 1 c. coconut
- 1 c. chopped nuts
- 1 sm. can crushed pineapple (drained)
ICING
- 2 - 3 oz. pkgs. cream cheese (softened)
- 1 TBSP milk
- 2 tsp. vanilla
- Dash salt
- 1 lb. box of conf. sugar
Blend all cake ingredients, pour into 9 X 12 pan for 1 hour at
375 degrees.
