Anita Canary's Carrot Cake

• 2 c. flour
• 2 c. sugar
• 1 1/2 c. Wesson Oil
• 2 tsp. cinnamon
• 2 tsp. soda
• 2 tsp. salt
• 3 eggs
• 2 c. shredded carrots
• 1 c. coconut
• 1 c. chopped nuts
• 1 sm. can crushed pineapple (drained)

ICING

• 2 - 3 oz. pkgs. cream cheese (softened)
• 1 TBSP milk
• 2 tsp. vanilla
• Dash salt
• 1 lb. box of conf. sugar

Blend all cake ingredients, pour into 9 X 12 pan for 1 hour at 375 degrees.
