Carrot Ring

Ingredients:

Mix carrots, onion, and crumbs in a bowl. Add eggs, salt, pepper and mix well. Turn into a WELL greased 5 Cup ring mold. Bake at 350 for 30 to 40 minutes or until well set.

Cool a few minutes, then loosen edges and turn onto a plate. Fill center with a hot veggie.
